Beecher's is really good but it has a very distinct taste that some may not like as much as a more "traditional" mac n cheese. Kirkland's was very similar but not quite as sharp of a cheese flavor. My guess is Beecher's wasn't able to keep the supply up that Costco needed so they decided to make a similar spinoff version.
