Kazan will be very easy to sharpen but won't hold and edge like the Black dragon, (might not be a huge difference in a home use setting) If you like the more rounded d-handle, a little less reactive blade with slightly improved edge retention, chose black dragon.. Appreciate the response, very excited about receiving my new knife - thank you.

I recently ordered a 150mm Sakai Takayuki 33 Layer Damascus Petty knife, but I got an email from the website informing me that the knife is currently out of stock for two weeks. They have offered to upgrade me to the "Kazan Aogami Super Petty 150mm" for free, whoever I can't seem to find any information about the knife.

Kazan knives are well made and the steel is a Powdered Tool Steel with a rockwell 65-66 hardness, BUT it can be sharpened much like a softer steel. It also does not react to acids like Carbon Steel Knives. I like this steel MUCH more than ZDP 189 and in fact HAP40 is nick named "Voodo Steel." Kazan HAP40 knives rule in the kitchen.

I'm eyeing some of the Kazan kiritsukes in Ginsan, but there's very little info on this brand. I'm always a little apprehensive about buying wa-handle knives online because there's a good chance they will come with some kind of misalignment or tilt, even on the "good" brands. So I was wondering if any of you all have any experience with this.

Profile, geometry and F&F of the blade all suck BIG time. Though good edge retention and decent enough to sharpen. panda O.G. KKF Supporting Member.

This the first knife I've ever bought, wanted to get something that'd be pretty useful for general tasks so I went with the 210mm gyuto. I considered getting the 240mm but I held a miyabi that size in a store a few weeks ago and it just felt a bit big. Bought it from cleancut and overall very happy so far.
