Lita Squash. Shaped more like and eggplant and a little lighter in color than typical summer squash, the Lita Squash was just as pretty as it was, delicious. I grabbed a few of these at my local farmers market that sets up shop in my town's municipal lot. It's a great market, small, but good.

About Lita Squash: In September of 2013, we found this lita squash, a variety of summer squash, at a local farm store. This was our first experience with this variety of squash, so it sparked our interest and we decided to do some culinary experimenting.
