Een luchtig koekje van parmezaan met erop een mousseje van parmezaan met eromheen een gel van groene kruiden. Lekker met parmezaan in de hoofdrol en een hele mooie textuur. Een makaron met een rolletje komkommer in een frisse gel, heel verfijnd. En op een zilveren lepel een lekker hapje met watermeloen, mooi. Gevolgd door een trio amuses.
