Strawberry Jalapeño Jam Recipe No Pectin or Canning Life's Ambrosia

From 10 minutes to 10 hours, this Orange Jalapeño Marmalade is fantastic for wine tastings, charcuterie, brunch and a spot of afternoon tea. I normally make this with habaneros, but Rosy preferred it with less heat so I used jalapeños. It was paired with creamy goat cheese and a crispy baguette.

directions. Chop peppers fine mince in food processor. Add to water, bring to boil, simmer 3 - 4 minutes. Strain & set water aside, reserve about 1/4 of the peppers. Combine the 2 3/4 C sugar, the reserved peppers, lime juice, wine vinegar, and enough of the pepper-water to equal 3 C (may add more water if needed to bring it to 3 C).

For medium heat, leave the seeds in half of the peppers. For a mild jalapeno jelly, take out all of the seeds. Add jalapenos and vinegar to a high powered blender and blend until smooth. Using a ladle and canning funnel, ladle the hot jalapeño jelly into the prepared hot jars, leaving ¼-inch headspace. Wipe the rim; center lid on the jar and apply band until fit is fingertip tight. Prepare 4 (½ pint) jelly jars with their lids by placing them in boiling water and allow to simmer while making the jam. Mix the box of pectin with ¼ cup sugar. First, place the jalapeno and water together in a small jar. * (with or without seeds) 1 whole jalapeno cut into 4 pieces with seeds, 1 cup of water. Second, place it in the fridge overnight. Measure out the amount needed in the morning. (Or) Place 1/2 of a jalapeno with or without seeds into a pan.

Place peppers in a large pot or heavy large saucepan with vinegar, salt and sugar and bring to a full rolling boil over medium-high heat. Boil for 10 minutes, stirring often. Add Certo pouch (liquid pectin), stir, and boil 1 more minute. Fill canning jars leaving 1 inch headspace.

Pour 3/4 cup of water and 1/4 cup of apple cider vinegar into a pot. Turn on the heat to medium-high. Add the chopped chilies and peppers, the sliced orange rind and the zest and juice of 1 lemon. Bring to a boil. As soon as it starts to boil, reduce the heat to medium, then add the cut orange sections and 1 1/4 cups of sugar.
