Christmas Rice Pudding (Riskrem) Preheat oven to 350°. In a 3- to 4-quart nonstick pan, simmer milk, rice, 1/2 cup sugar, and the salt, stirring often, until rice is tender to bite and mixture has thickened, about 30 minutes.

Directions. Bring water and salt to a boil in a saucepan then add the rice and simmer, covered, until the rice absorbs the water, about 20 minutes. Stir in milk, 1/4 cup of the sugar, seeds from the vanilla bean, and half of the lemon zest. Bring almost to a boil, stirring occasionally, and cover, allowing it to continue simmering until thickened.

Riskrem (rice cream) A norwegian dessert made of rice porridge and whipped cream. Often served with a red syrup sauce or berry sauce (just some berries and optionally some sugar briefly boiled). Note that because it's often made with leftovers from rice porridge served a day or two earlier (it would be a bit too much to have a cristmas dinner.

1 Tsp. 1 Tbsp. Mix ingredients, bring to boil, lower heat. Cover and simmer gently stirring frequently. Watch so as not to scorch. 1 2 to 2 hours until rice is soft and mixture is thickened. (Note: if long grain rice is used it results in a Riskrem that is "slightly" chewy.) Remove from heat and add the following and then chill mixture overnight.

Turn off the heat. Add sugar and Vanilla extract. Mix well till the sugar is dissolved. Let the rice pudding mix. Refrigerate overnight. The next day, whip the cream into soft peaks. With a gentle hand, fold the cream into the chilled rice pudding. Divide into 4 equal portions. Top each portion with 1/4 cup of berry sauce.

Add the milk and continue cooking on low heat, stirring frequently so the porridge doesn't stick. Cook until the porridge is as thick as you like (about 30 minutes). Top with sugar, cinnamon and butter, or anything else you like.
