In a large mixing bowl whisk together lime juice, olive oil, honey, garlic, ancho chili powder, cumin, salt and pepper. Add steak pieces to lime mixture then toss well to coat. Place beef in skillet. Pan-broil 12 to 15 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Remove beef from skillet. Set aside; keep warm. First, prep the chimichurri. Finely mince the cilantro, parsley, and garlic cloves. Add them to a bowl. Add the salt, red pepper flakes, and red wine vinegar. Slowly drizzle in the olive oil, whisking to emulsify. Set aside while you prep the rest. Next, make the steak. Preheat the oven to 425 degrees.

Instructions. Preheat oven to 400F. Spray a 9x13 inch baking dish with nonstick spray and set aside. Preheat a skillet over medium/high heat. Add olive oil and garlic and saute for about 2 minutes. Season the steak with salt and pepper to taste and add to the skillet. Grill until medium, about 3 minutes.

Once the steak is done marinating, heat a large pan over high heat and cook for about 6 to 7 minutes per side or until desired doneness. Allow the steak to rest for about 5 minutes before slicing. As the steak rests, fry eggs in a pan. Heat tortillas and assemble with steak, fried eggs, salsa verde, queso fresco and cilantro.
