The result: Texas Chili Spaghetti - Five Ways. Spaghetti (or Angel Hair, my preference) noodles are covered with thick meaty Texas Chili (no beans!), topped with shredded cheddar, finely-diced onions, sliced jalapenos, and sour cream. (I don't know many people who eat sour cream on their chili, but that's how I roll.).

Preparation. Heat a large Dutch oven over medium-high to high heat, add oil, 2 turns of the pan, then add beef and brown and crumble. Season with salt and pepper and chili powder, add onions, garlic, bay leaf, oregano, allspice, cinnamon and cloves, and reduce heat a little, partially cover pan, and cook to soften onions 5 minutes.

In a large pot, heat oil and add ground beef. Cook until browned then add onion, garlic, and bell pepper. Stir in chili seasoning, tomatoes, and tomato sauce. Let cook for about 5-10 minutes. Add beans and let cook for another 5-10 minutes. Pour in cooked pasta and stir to combine. Taste and adjust seasoning, if needed.

Preheat oven to 350°. In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Transfer to a greased 2-1/2-qt. baking dish; stir in the remaining ingredients. Cover and bake for 65-70 minutes or until spaghetti is just tender. Let stand, covered, for 10 minutes.
