Preheat the oven to 450ยฐF. Slash the top of the bread in a tic-tac-toe pattern. If you're using a baking stone, use a peel to transfer the loaf, parchment paper and all, to the stone in the oven. Otherwise, put the pan of bread into the oven. Bake for 15 minutes, misting bread with water from a spray bottle three times during the 15 minutes.

Lynn - November 20, 2020. Last month at Trader Joe's, the bread-stocking guy said he'd heard TJ was stopping making the Tuscan Pane Dark Pumpernickel. I bought the 2 loaves they had, and froze them. Its the only item that lures me to the store since covid set in. I've tried baking pumpernickel but it's never like TJs.

Trader Joe's bread goes bad fast. It doesn't matter if you store it on the counter or in the refrigerator, or even what kind of bread you buy โ€” whether it's sprouted multi-grain, sourdough, bagels, lavash, or tortillas โ€” in what seems like no time at all, you see the first signs of mold. Take this accurate depiction, for instance:

Instead of just more-or-less randomly picking some new kind of bread from the myriad choices at TJ's, as I often do, I searched specifically for this one after having seen somebody on Twitter rave about how it was her favorite.

Trader Joe's Tuscan Pane, $2.69 for 26 ounces. A delightfully crusty-yet-chewy texture is what makes the Tuscan Pane bread a true stand-out for me. It even looks like you just picked it up from your neighborhood baker, with a slight dusting of flour to bring out the subtle nuttiness.

Focaccia with Caramelized Onions and Cheese. I love the flavor of the onions in this Trader Joe's focaccia bread. They're pungent and sweet and rich. And the focaccia itself is puffy and doughy and not dry at all. If I had to quibble, I'd say the cheese could be more flavorful, but really it's all about the onions.

A large 27 oz. loaf of Tuscan Pane original "white" was until recently $2.29. It has gone up to $2.49 (All wheat products are up) The Whole Wheat version goes for $2.69. Flavorwise I think I prefer the original "white" one to the whole wheat one but the whole wheat is still good too if you prefer that. I usually always prefer to buy.

1) Right off the bat - this bread tastes like it's on a different tier compared to regular grocery store-shelf bread. It has that artisanal quality, whatever that means. It's definitely more rustic and has a deeper flavor that tells you someone used a sponge - which means there was some sort of pre-ferment that was used to make this bread.

This is a HARD, DRY BREAD. I like the crusts better than the actual bread. The crust I expect to be hard, but the bread needs to have at least a smidgeon of "give" to it. The first day was really the only day this loaf was edible to me. And even then it wasn't great. Price - $2.49.
