Using your hands, press the marinade all around the ti tip, then press the air out of the bag and seal tightly, making sure to press the marinade around the ti tip to coat. Place in the fridge to marinate for at least 3 hours, preferably 8-24 hours.

Preparation: In a saucepan, mix together 1/4 cup of the sugar and 1/4 cup of the water and bring to a boil, stirring all the while. When the sugar gets a dark color, add the spices and stir. Bring back to a boil for a minute, and then add the vinegar, the other 1/4 cup of water, the soy sauce, and the fish sauce. Mix well and taste.

Make the marinade right in the bag! Measure all the dry ingredients into the bag. Then pour in the water, oil, and vinegar. "Smoosh" the bag from the outside to mix the marinade up and then place the tri-tip roast inside. Place the bag into the refrigerator. [Homemade] Tri Tip r/food

The tri-tip steak is cut from the tri-tip roast, which is part of the bottom sirloin subprimal cut. It is an economic piece of meat that is full of flavor—it is far less expensive than other equally flavorful steaks such as the rib-eye. The tri-tip has excellent marbling (the fat running through the meat) and is very tender as long as you don.

Flip the tri-tip. Transfer the pan to the oven and roast until an instant-read thermometer inserted into the thickest part of the tri-tip registers about 125ºF for medium, 20 to 30 minutes. Transfer the tri-tip to a clean cutting board and let rest 10 minutes (tent loosely with aluminum foil if the kitchen is cold).

Once the grill reaches a steady 250 degrees, place the tri-tip steak on the cooler side of the grill grates. Here's a guideline to reference: Rest 15 minutes - The pull temp will be 7-10°F below the final temp you're aiming for. Rest 20-25 minutes - The pull temp will be 10-12°F below the final temp you're aiming for. Plan out your cooking schedule to ensure you have ample time to cook your dish to your preferred doneness.

Preheat the grill to high heat. Leave unwrapped tri tip at room temperature for 30 minutes while the grill heats up. Grill the tri tip over direct heat for 5 minutes, each side, on a covered grill. Preheat the oven to 325°. Trim the fat cap on the tri tip so that it is ½-1/4 inch thick. Also remove any silver skin (if there is any). Prick the fat cap, down to the meat, with a fork or sausage pricker. This will help the fat render and get a nice crust. Generously salt and pepper the tri tip on both sides.
