1 cup chopped eggplant. 1 cup broccoli florets. 1 red pepper, de-seeded & chopped. 1/3 cup sun-dried tomatoes, diced. 1 cup of artichoke hearts, quartered. ¼ cup Kalamata olives, pitted & sliced. ¼ cup pine nuts. 1 tbsp minced fresh basil. Fresh grated parmesan cheese, for garnish.

Add eggplant, broccoli, pepper, and sundried tomatoes. Cook for 5-10 minutes, or until all of the vegetables are cooked through to desired texture, stirring regularly. Stir in artichokes, olives, pine nuts, and basil then cook for another minute. Remove from heat and stir in the cooked pasta. Serve warm, and garnished with parmesan cheese.

To save time, chop the garlic, bell peppers, and olives while the pasta is boiling. Set aside with the pine nuts, broccoli, and artichoke hearts. When the pasta is finished, turn off the stove and leave it in the water. Take a small to medium sized sauce pan and add 1/2 tablespoon of olive oil (or more if you like) and turn the heat to medium-low.

Preheat the oven to broil. Line a baking sheet with paper towels. Season both sides of the eggplant circles with salt and arrange them on the pan. Cover the eggplant with another sheet of paper towel and refrigerate for 2 hours. Place the flour in one bowl, the eggs in another, and the breadcrumbs in a third bowl.

Heat oven to 400. Place all vegetables on a baking sheet and toss with olive oil. Sprinkle with salt and pepper and roast to desired doneness. In a large bowl, toss roasted vegetables with pasta, basil and toasted pine nuts. Adjust olive oil, salt and pepper to your taste. Serve with Parmesan at the table.
